Let's talk atavola pizza.
One of the most meaningful gestures you can do to show someone you care, is create a home cooked meal by hand. Our pizzas are no different. Each one of our pizzas are artisanally handmade from the dough being hand stretched to our toppings being topped one at a time. This will lead to a slightly irregular shape each and every time – and that is something we are extremely proud of and the way Italy intended.
It all begins with our “starter” that is a mix of water, salt and fresh yeast. 00 flour, which is the choice flour for all Master Pizzaiolos, is then slowly mixed in with additional water to help with hydration. Once thoroughly mixed, the dough ferments anywhere from 12-48 hours before being hand stretched which gives each one of our crusts a rustic and artisan appearance. Once the dough is ready, it is placed in a traditional 900° Fahrenheit brick oven for 60-90 seconds. When it comes out of the oven, the dough has been kissed by the open flames giving it the signature Neapolitan crust.
Neapolitan pizzas can have a wide variety of toppings but it’s the Pizza Margherita that is most well-known and the base recipe of most varietals. After our dough is hand stretched and formed, pizzas are topped with crushed tomatoes from the San Marzano region that have the perfect balance of sweetness and acid. Next, only Fior di Latte Mozzarella will do. This smooth yet mild cheese adds the familiar creamy element of our pizzas without overwhelming any single ingredient.
From there, our flavor profiles of pizzas grow from four cheese, Mediterranean or vegetarian. But, regardless of the toppings, the one thing they have to be is fresh and authentically grown in the Naples region.
To help deliver you the freshest tasting pizza possible, we needed to ensure that our cooking process would still allow for the “fresh out of the oven” taste once in your kitchen. We blind bake our pizza to help give the dough a head start. That way, we can achieve the desired doneness and give the crust that famous “leopard” spotting. Pizzas are cooked in 900°F brick ovens for 90 seconds before being taken out and topped with fresh ingredients.
Pizzas are then cover wrapped to seal in freshness and flash frozen to make their way to you! This process allows for our pizzas to be heated and cooked properly for that freshly baked taste each and every time!
